During the harvest season, the coffee cherries are hand-picked and delivered to the Fugi washing station, where they are visually and flotation sorted. The process includes dry fermentation, thorough washing, and an extended drying process of 33 to 40 days, inspired by cooking methods to enhance flavors and maintain the coffee's freshness.
In Rwanda, farmers typically have small coffee plantations of approximately 250 trees, often grown alongside corn and potatoes. Although small in size, coffee remains their primary source of income. Washing stations, like Fugi, promote high-quality coffee production by offering better prices and support to farmers.
